Iced matcha lattes are everywhere right now, and once you know how to make one properly, you’ll understand why. Creamy, smooth, slightly sweet, and endlessly adaptable to whatever milk you’re working with. If you’ve got matcha and milk to hand, you’re most of the way there.

Here’s how to do it properly.

What You Need

Step 1: Make Your Matcha Concentrate

The key to a great iced matcha latte at home or in a high service environment is setting yourself up for success with a concentrate rather than trying to whisk matcha powder as you go for a long drink. This concentrated method helps serve strong, consistent, smooth lattes.

Use a ratio of 1.0g Matcha in 10ml of cold water per 100ml of milk. Whisk or blend the concentrate until smooth, then, depending on how much you’ve made, store in the fridge. Step 2: Build Your Drink

  • Fill a Glass with Ice
  • Pour over 200ml of Milk (or alternative)
  • Top with 20ml of Matcha Concentrate

The concentrate layers through the milk, giving a deep green gradient that looks as good as it tastes. Stir when you’re ready to drink.

Scale up or down using the same ratio: 10ml concentrate per 100ml milk, depending on how many matchas you’re making or how long you want your drink.

Tips

Use cold water (not hot) to make the concentrate. Hot water oxidises matcha quickly and can dull the colour and flavour. Cold water keeps it vibrant and the taste clean, plus allows for any excess heat from blending if using a mixer.

Ceremonial or Barista Grade Matcha works best here whereas lower grade matcha can taste bitter and look dull. Without the right base, the earthy flavour won’t cut through the natural sugars and fats present in the milk.

Oat milk is the most popular plant-based option for a reason as it’s naturally creamy and doesn’t overpower the matcha. Almond also works well if you want something lighter, and Soy milk is a silky classic making a comeback. 

Make the concentrate ahead and keep it chilled. It holds well for up to 48hrs, which makes it easy to prep for service or batch at home.
