An Easy and Delicious Pie Recipe
We love a warm pie on cosy days. It’s also a really useful way of using up fruit that is near it’s best before date. We like to enjoy this easy and delicious pie recipe seasonally, by putting different fillings in, depending on what we have on hand and what’s in season.
What you’ll need
For the filling
250-450g of fresh fruit of your choice (we like strawberries, plums, apples, blackberries, peaches, pears or a combination of these!)
For the pastry
250g of plain sugar
175g plain flour
Pinch of Salt
85g butter
2-3 tbsp cold water
How to make it
For the filling
Put the fruit and sugar into a pan and bring to a simmer, waiting for it to reduce into a thick consistency. If you’re using strawberries or peaches, you may need to add a tablespoon of corn flour to thicken it towards the end
Take off the heat and chill until room temperature
For the pastry
Put the flour and salt in a bowl and add the butter, cubed
Use your fingertips to rub the butter into the flour until you have a mixture that resembles breadcrumbs
Using a knife, stir in just enough of the cold water to bind the dough together. Start with 1-2 tablespoons and add more if needed
Gently knead the pastry in the bowl
Cover the dough and chill for 30 minutes
To bring it all together
Roll out the pastry and place it on an oiled baking tray or baking paper
Dollop the filling into the middle, and roughly fold the pastry around it to make a flattened bowl shape
Bake for 10-15 minutes, checking regularly
We like to enjoy ours with a cup of tea and some ice cream
